Hedgehog Potatoes

6 medium potatoes
2 tablespoons olive oil

Wash potatoes and cut in half. Make diagonal cuts in each half of the potato to make a lattice pattern. Cover potatoes completely with olive oil.

Place on baking tray at 200 degrees C for 1 hour until cooked and crispy

Chicken Drumsticks

4 chicken drumsticks
1 small pot of natural yoghurt
A couple of dollops of runny honey

Marinade the chicken in the yoghurt for at least one hour in the fridge (the easiest way is to place the chicken in a bag you can seal, add the yoghurt and honey and allow marinade to spread over chicken. Dry chicken and bake in oven for 50 minutes at 175 degrees C. Serve with broccoli florets and sauteed potatoes.

Easy Peasy Lemon Muffins


Apparently you can't go wrong with these - even if you think you can't make cakes.

6oz caster sugar
6oz butter or margarine at room temperature
3 eggs
6oz self raising flour
1 teaspoon baking powder
finely grated zest of 1lemon
juice of 1 lemon

Place all ingredients in a bowl and whisk on a medium setting until everything is combined, then on a high setting for about 5 minutes.

Spoon into muffin cases and bake at 200 degrees C for about 20 minutes, or until golden brown. (may need 30 minutes).
